Poached egg curry/ Egg drop curry

                                                                               

Two years back we were invited by my husband's boss for dinner.His wife(native from andhra) is a great cook so along with other dishes she had prepared the delicious andhra style poached egg curry(egg drop curry).As i am always inquisitive about new recipes i had asked her the basic process of making this curry.She had used tomato base to make the curry.Here in this recipe, i have made the same egg drop curry with  coconut base giving it goan touch.This curry tastes super yummy when served with roti,bread or rice.It's a perfect dish for party or potluck.

This curry doesn’t require boiled eggs, so you don’t need to worry about boiling the eggs first and then wait for them to cool down a bit before peeling the shells.
For this curry, the raw eggs are directly dropped into the gravy instead of adding boiled eggs.Thus, this reduces the cooking time. So a tasty curry can be served under 30 minutes.The eggs are cooked in spicy gravy, so they absorb all the spices and curry tastes much more flavorful than regular boiled egg curry.This curry is the best to cook at times when you have unexpected guests and you don’t have much time to prepare food, but you still want to impress them with something really exotic then this curry comes to the rescue.

          Ingredients (serves 3-4)

  • 6 eggs
  • 2 medium size onions (chopped)
  • 1 tomato (chopped)
  • 3-4 tablespoons oil 
  • 2 tablespoons ginger garlic paste
  • 1 bayleaf
  • 1/2 tsp cumin seeds
  • 1 inch cinnamon piece
  • salt (as per taste)
  • 1 tsp garam masala
  • 1 tsp chilli powder
  • 1/2 tsp turmeric powder
  • 1/2 cup grated coconut
  • Few coriander leaves chopped(to garnish)

          Method of preparation 

  • In a frying pan take some oil (around 2 tablespoons)and fry 1 medium size chopped onion till it becomes translucent.
  • Next in the same pan add grated coconut and shallow fry it nicely until coconut turns light brown and aromatic.
  • Switch off the gas and let it cool down.
  • After some time take this fried onion and coconut mixture and put in a blender,also add 1 tsp garam masala,1 tsp chilli powder and 1/2 tsp of turmeric powder.Grind altogether to make fine paste and keep aside.
  • In the same frying pan take some oil,into that add 1/2 tsp of jeera,small peice of cinnamon and 1 bayleaf and saute it for a while.
  • Then add ginger garlic paste and saute for a while.
  • Take the flat bottom pan and add 1 medium size chopped onion and fry nicely till golden brown.
  • Then add chopped tomato and fry till raw mell dissapears.Add little water if required.
  • Then add the coconut gravy to the pan,also add salt and sugar and mix well and cook nicely for 3-4 minutes till it starts boiling.
  • Reduce the flame to medium low and slowly crack the egg one by one and put in gravy keeping some gap between two eggs.
  • Cover and cook on low medium flame for 8-10 minutes.
  • Do not stir in between.After 10 minutes eggs will be cooked nicely then flip on the other side using spoon.
  • Cook for couple of minutes more.Stir gently if required.
  • Switch off the gas and garnish with coriander leaves.
  • Serve hot with Roti/Pav/Rice.
          
          Note

  • Instead of chopped tomato you can also use tomato puree.
  • Dont stir the curry once the eggs are added.
  • You can use the same recipe and add boiled eggs instead of adding the raw eggs directly into the curry.

Egg rawa fry


Eggs are commonly used to make omelette, half fry, egg curry, egg biryani, egg bhurji and so on, the recipe list continues. But I think hard-boiled egg is one of the healthiest ways you can consume it and is the perfect option for those watching their weight.

This simple recipe of hard-boiled egg i got from my friend Vatsala.Once I had been to her place for lunch and she had prepared this dish.This is the quick and tasty recipe from hard-boiled egg.It can be served as starter or side dish in non veg meal.I know you all will like this new version of boiled egg.As per goan nomenclature i call it "Tatyacho fodi"
                                                         
                               
      
        Ingredients
  • Eggs (3)
  • Water (as per requirement)
  • Oil (1-2 tbsp)
  • Rawa /semolina (1-2 tbsp)
  • Chili powder (½ tsp)
  • Turmeric powder (½ tsp)
  • Salt (as per taste)

        Serves (1-2)
                                                        
    

        Method of preparation
  • To make the perfect boiled egg, put eggs in a single layer,to a saucepan.Add enough cold water to cover them by 1 inch at least, and cook for 10-12 minutes on a medium flame.
  • Once the eggs are properly cooked allow them to cool for a while then remove the outer shell from the eggs.
  • Cut around 2-3 pieces of one egg.(Depending on the egg size)
  • In a plate take rava and add turmeric powder, chili powder and salt. Mix properly.
  • Coat each piece of egg with this rava mixture.
  • Shallow fry this coated egg pieces on the frying pan by using oil.
  • Flip over in between so that both the sides are nicely done .It takes about 5 minutes as eggs are already cooked.
  • Egg rawa fry are ready, serve hot with tomato ketchup.

Chicken fried rice..

                                                                               

Who doesn’t like chicken fried rice? But normally we have the tendency to have this Chinese dish in the restaurants. As this dish is my husband’s favorite one and easy to make at home. I tried it this time at home as he was craving for it ever since!

I learned a few awesome tricks on how to get the perfect fried rice in my recipe here.  I really couldn’t believe how good it turned out to be. 

I promise that you can prepare chicken fried rice at home better than take out chicken fried rice. You will really be impressed with yourself. Do try this out…

Frying marinated chicken
                                                                                                                                                  
Cooked rice
  
        Ingredients
  • Rice 1 cup (soak for 1 hr)
  • Oil (3-4 tablespoon)
  • Lemon juice (1 tsp)
  • Salt (as per need)
  • Chicken (1 cup shredded/minced/chunks)
  • Pepper powder (1 tsp)
  • Corn flour (1 tsp)
  • Soya sauce (2 tsp)
  • 1 egg (beaten)
  • Ginger garlic (1 tablespoon each finely chopped)
  • Spring onion white (1 tablespoon)
  • Carrot (1 tablespoon)
  • Capsicum (1 tablespoon)
  • Chili garlic sauce (1 tsp)
  • White vinegar (1 tsp)
  • Spring onion greens (2 tablespoons) 
       Serves ( 2-3)

        Method of preparation
  • Take the chicken and marinate it with salt (around 1 tsp), corn flour, 1 tsp soya sauce and ½ tsp    pepper powder for about 15 minutes.
  • Wash and soak long grain rice for an hour. Boil 4 cups of water for 1 cup of rice. Once it starts boiling vigorously, add the rice. Add lemon juice, salt (around 1 tsp) and 1 tablespoons of oil when the rice is cooking. 
  • Simmer the rice on a low flame uncovered. Cook till soft yet grains separated. Drain water immediately and spread the rice it in a plate and let it cool down.
  • Now take the marinated chicken in a frying pan containing 1 tablespoon of oil. Cover and cook on a low flame. Keep stirring to prevent burning. This is the perfect way to get tender chicken. Once the color of the chicken changes and it’s cooked turn off the flame and keep it aside.
  • Beat one egg in a bowl and keep aside.
  • In the same pan take 1 tablespoon of oil and saute chopped ginger and garlic for a while the add spring onion whites, carrot, capsicum and saute for some time.
  • Now move the veggies in one side and pour the beaten egg. Wait for a while, then scramble the egg in the pan and mix with veggies.
  • Now it’s the time to add Soya sauce (1 tsp) and chili garlic sauce (1 tsp), mix properly.
  • Then add cooked rice, ½ tsp of pepper powder and vinegar. Saute for some time. Finally add spring onion greens. Adjust salt as per need.
  • Fried rice is ready.Serve hot.
      
        Note
  • Some people add ajinamoto (MSG) for extra flavor but it’s optional. I avoid using it in my recipes considering health point of view.
  • To make chicken fried rice, i have used minced chicken but you can even use cubed boneless fillets or shredded chicken as per choice and availability
  • You can add veggies as per your taste and availability.
